The recipe of Can Roca
Creamy pumpkin soup with salted sardine eggs

Elaboration: Chop the onions and leek into wedges and put them in a casserole dish to cook in the butter on a low heat. Make sure they don’t go too golden. Meanwhile, peel the pumpkin and cut it into small cubes. When the onion and leek begin to go brown, add the pumpkin, let everything mix together and cover with water. Add salt and let it simmer on a low heat for an hour. Put it in the blender and chinois strainer to end up with a smooth cream. To finish off, pour in the glass of cream, add salt, leave it to simmer for 5 minutes and take off the heat. When serving, add a teaspoon of salted sardine eggs which contrast well with the sweet pumpkin. Another option could be to add pieces of Jabugo ham. If you like the cream to be thick, the vegetables may be accompanied with potatoes.
