Strawberry and rose textures

Elaboration:
Preparation: Boil the water and sugar and infuse the strawberries off the heat. Leave to rest in the fridge for 24 hours. Strain the juice with a chinois strainer. Use the blender to make a coulis with the strawberries and infused water. Add two sheets of pre-soaked gelatine. Spread syrup over the rose petals and place in the over at 180ºC for 5 minutes. Presentation: Pour the strawberry water in a glass. Place the strawberry coulis on top with a piece of fresh strawberry. Finally, cut the rose petals julienne-style (fresh petals could be mixed with those from the oven). An ideal dessert for the season, being when the first strawberries and flower buds appear. Ideal with: Southbrook Winery 2001 VQA NIAGARA PENINSULAR (CANADA) Ice-wine.
