The recipe of La Cisterna
Banyolins kidney beans with white tuna tartar
Ingredients: banyolins, 120g white tuna fillets (skinned and boned), soft onion sliced brunoise-style, 2 anchovies in oil, old-style Dijon mustard, salt and a few drops of aniseed .

Elaboration: Place the banyolins to soak the night before. Wash and place them in the pan with water covering them. Add salt and simmer slowly for 45 minutes. Let them cool in the water. Chop the white tuna and add all the ingredients. Stir and add virgin olive oil. Serving up the dish: Place a base of strained banyolins in a round mould, salt them and place the tartar on top. Press down and place some lamb’s lettuce and cherry tomatoes, and dress with virgin olive oil. Cut a piece of red pepper in small cubes and scatter on the plate.
