Observations: The house has had the name ‘La Formiga’ since 1871. It has three separate dining rooms suitable for parties and celebrations. There is a courtyard outside with a garden to enjoy a summer dinner under the stars. The simple traditional menu adapts to available seasonal produce without excluding modern culinary trends. The meat and sausages are top-quality and from the region. The fresh fish is from Roses. Some of the vegetables and garden produce are organic. The recipe of La Formiga
Courgette terrine with prawns

Elaboration: Fry the prawns in a paella pan and put to one side. Put the sliced courgettes and leeks in the same oil, salt and leave to cook on a low heat. Peel the prawns, cut them small and add them to the vegetables with the cream and beaten eggs. Place everything in a mould in the oven in a bain-marie for around 40 minutes. Once done and removed from the mould, pour over béchamel sauce and grated cheese and gratin for a few minutes.
