Veal stew

Elaboration: In a pot with lard and olive oil, add the veal cut into cubes with the finely chopped onion. When the veal and onion start to soften, add the glass of old wine and let it reduce before adding the grated tomato. Simmer slowly until the tomato is cooked and, afterwards, add the pre-prepared meat stock. Then add a bunch of herbs made with laurel and parsley. Whilst it simmers, cut the potatoes into cubes and fry them lightly in the paella dish. Add the veal, sliced carrots and peas to the pot. Afterwards, when the veal starts to soften, add the potatoes, the picadillo of almond, biscuit and garlic, and the glass of muscatel and anisette. Leave on a low heat. After a few minutes, season with salt and pepper. The stew is ready to eat.
